Long-Term Storage Studies on Dehydrated Ration Items and Food Packets

Abstract:

Studies were conducted for the effects of long-term storage at three temperatures 40 deg., 70 deg., and 100 deg. F on physical and chemical characteristics and quality of freeze-dehydrated ration items and food packets. Food packets from Meal, Ready-to-Eat, Individual MREI included ham and chicken loaf, beef steak, beef stew, frankfurter, fruitcake, pineapple, cheese spread, and chocolate brownies. Freeze-dehydrated ratio items from Packet Long Range Patrol included beef hash, beef stew, chicken stew, spaghetti and meat sauce, chili con carne with beans, chicken and rice, escalloped pork with potato and beef and rice. Freeze-dehydrated foods from Packet Long Range Patrol were much more stable in quality than food packets from MREI during storage at three temperatures. After 20 months of storage all freeze dehydrated foods were still in highly acceptable condition.
