B-52 Crew Evaluation of Thermostabilized Foods.
Abstract:
A total of 453 thermostabilized meals--each consisting of an entree, two vegetables, and a dessert--were evaluated by 289 crewmembers aboard B-52 aircraft during 15 days of combat in July 1972. Each food item was rated for appearance, texture, flavor, and overall acceptability. Among respondents, 64.3 preferred the thermostabilized meals to the existing frozen meals and 76.1, to the foil-pack meal. If the frozen food system is replaced by the thermostabilized food system, the weight and volume requirements for storage and preparation can be reduced by approximately half. Author
