Modification of the composition of the diet can cause alterations in the enzyme activities of different tissues and organs. Changes in enzyme activity in response to diet are part of the process of metabolic regulation enabling a biological system to function efficiently and harmoniously. Lipid metabolism is closely coordinated with the diet because lipids are repositories for excess energy and a source of energy during periods of deprivation. The effect of diet on lipid metabolism in the liver, muscle, and adipose tissue frequently differs and is species dependent. Fatty acid uptake, synthesis, esterification, mobilization, and oxidation are coordinated metabolic processes that are under dietary control. Author
