The study report contains an analysis of the management of food service within the Office of the Secretary of Defense and the military departments. Procedures and organizations which inhibit an optimum food service management system are discussed. Recommendations are made for the establishment of a uniform food service management system in the Department of Defense which will be responsive to present day requirements in food service operations. This study effort represents a major task in the Uniform Ration Cost System Study which is a research effort under the Department of Defense Food Research, Development, Test and Engineering Program.
