Abstract:

The purpose of this study was to evaluate three methods of packaging dehydrated tomato sauce mix in comparison with a commercial packaged product, Dehydrated tomato sauce mix with desiccant CaO packets was packaged in 401 x 411 cans in which the internal atmosphere was maintained as follows nitrogen containing less than 2 perecent residual oxygen, or air or vacuum-26.7 kPa pressure 22 inches Hg gauge the commercial product also used this latter vacuum packaged atmosphere.
