Abstract:

The effect of freezing and thawing on the 1966 Prototype of the Meal, Ready-to-Eat, Individual, was studied to determine if there were changes in 39 food items in the ration. Using six controlled freezing and thawing cycles, it was found that there was little change in ratings due to freezing and thawing when compared to control samples stored at 40F. 4C.. A decline in quality of chicken a la king was noted after second cycle and after fourth cycle in beef stew.
