The report presents a detailed definition of a modern food service system designed for Fort Lewis, Washington. The system has a capacity of 25,000 meals per day and is based on the concept of central food preparation and warewashing with satellite dining halls. System design criteria was developed using the results from several concurrent studies which were conducted during 1971 at Fort Lewis. The design objectives were to provide significantly improved service to the military customers and substantially reduce manpower requirements.
