Results are given for a storage study of a proposed modification of the standard fallout shelter ration biscuit at -20C, 20C, and 40C. Modification was the substitution of a hydrogenated soybean oil shortening for shortenings originally specified. Data include condition and headspace gas contents of 5-gallon metal cans, physical condition of packages and ration units, fracture strength, moisture contents, Hunter color values, sensory quality and hedonic ratings for acceptability of the ration, and peroxides and free fatty acids in extracted shortening after 0, 3, 6 and 12 months in storage.
