Abstract:

The paper presents a review of the literature data with respect to the biochemical processes occurring in the maturation of soft fruits and to the effect of environmental factors temperature, gas composition of the atmosphere on these processes. High priority is given to the study of relations between the physiological state and respiration of fruits and their accumulation of various metabolites. The paper covers the problems of CO2 release, oxidative activity of mitochondria during the climacteric period, oxidative phosphorylation protein synthesis, variations in the polyphenoloxidase activity at different stages of ripening and aging, pentosophosphate cycle, synthesis of the compounds responsible for the aroma transformations of carbohydrates and pectins, control of ripening in relation to the condition and environment of fruits.
