Investigations were made on the mode of invasion of fruit and vegetable tissue by ice and the changes produced by freezing and thawing and freeze-drying of the tissues as well as rehydration evaluations. In general three methods of exploring the effects of freezing and freeze-drying were used. 1 Direct observation of thin sections of fresh tissue under a cryomicroscope during freezing and thawing. 2 Observations of material fixed and stained after it had been freeze-dried. 3 Observations of material sectioned while in the frozen state or after freeze-drying.
