Thermal conductivity measurements for water and ice down to cryogenic temperature ranges were made and are compared to other information found in the literature. Conductivity measurements for bovine liver in the unfrozen and frozen states were also determined and compared to the behavior of water and ice. Heat capacity measurements of bovine liver in the unfrozen and frozen states were determined and compared to the values known for water. The numerical and analytical techniques used to investigate the transient temperature behavior of idealized biological materials that are being cryogenically frozen and thawed are presented.
