Progress is reported on a bacteriological survey of 35 dehydrated foods. The following microbial groups are enumerated 1 total aerobic 2 coliform 3 anaerobic spores and 4 Salmonella. In addition, the prefreezing, freezing and drying effects on survival of five microbial types are discussed.
