Abstract : The focus of the work reported here is to evaluate a selection of readily available rices to determine cooking, freeze drying and rehydration characteristics, with the aim of improving the quality of freeze dried rice used in Australian military ration packs. Samples were examined by sensory evaluation, texture profile analysis and environmental scanning electron microscopy. The findings of this study will provide guidance for an expanded series of production scale improvements and evaluations.
